This course gives students practical skills and knowledge for working in the food and hospitality industry - one of the UK's biggest and most exciting sectors.

Students will learn about food preparation and presentation, nutrition and menu planning, job roles and how the whole industry operates. It’s ideal for those interested in cooking, becoming a chef, running a food business, or events planning!

COURSE CONTENT

You will study the following;

Different hospitality and catering providers, how they work, the types of businesses in the industry, job roles, skills needed for employment, and things like contracts, cash flow and advertising.

You’ll study how the industry operates day to day, including different venues, kitchen equipment, stock control, meeting customer needs and planning suitable menus. Health and safety is also a key focus, including food laws, risk assessments, contamination and different dietary requirements.

 

 

SUBJECT UNITS AND ASSESSMENT OUTLINE

Unit 1 The Hospitality and Catering Industry (40%) Written Exam (at the end of Year 11)

Short and extended answers based on applied situations. Applying knowledge and understanding of the hospitality and catering industry including provision, health and safety, and food safety.

Unit 2 Hospitality and Catering in Action (60%) Controlled Assessment

Plan, prepare, cook and present dishes for a specific client or event. Applying knowledge and understanding of nutrition, dietary needs and menu planning.
